A sweet Filipino classic merienda (snack). Ingredients listed here are all available in any Asian markets.
INGREDIENTS
8 oz package frozen sweet flour balls (can be replaced by sticky rice balls)
8 oz package frozen taro balls
1 can of Chaokoh Coconut Milk or any preferred brand
1 can sweet ripe jackfruit (shred into strips)
1 med piece of sweet potato (bite size cut)
1 – 1.5 cups brown sugar (or according to your taste)
1 tbsp vanilla
About 1.5 Cups of Water
Boiled or cooked Sago or tapioca balls maybe added
COOKING DIRECTION:
Boil sweet potato and jackfruit in coconut milk and water
Once boiling, add brown sugar and vanilla
Simmer on medium heat, stirring ocassionaly
When sweet potato is about cooked or halfway soft, add in the sweet rice and taro rice balls. Let it reach the rolling boil for about 5 minutes while stirring gently and making sure balls don’t stick together. Simmer for another 8 minutes on medium heat stirring constantly. Turn off stove let it cool down a bit before serving. Can be eaten hot, room temp or chilled.
